Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, egg, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the rainbow sprinkles gently.
  5. Fill each mini muffin cup about 3/4 full with batter.
  6. Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cakes to cool completely on a wire rack.
  8. If desired, divide the cream cheese frosting into bowls and tint with food coloring. Pipe or spread the frosting onto each mini cake.
