Watermelon Gazpacho

A refreshing and vibrant cold soup blending sweet watermelon with crisp cucumber and tangy tomato, perfect for hot summer days.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 2 medium tomatoes, chopped
  • 1 medium cucumber, peeled and chopped
  • 1/2 red bell pepper, chopped
  • 1/4 red onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and freshly ground black pepper, to taste
  • Fresh mint leaves for garnish

Instructions

  1. Combine watermelon, tomatoes, cucumber, red bell pepper, red onion, and garlic in a blender or food processor.
  2. Blend until smooth but slightly chunky for texture.
  3. Slowly add olive oil and red wine vinegar while blending to emulsify.
  4. Season with salt and pepper to taste.
  5. Chill the soup in the refrigerator for at least 1 hour before serving.
  6. Garnish with fresh mint leaves and a drizzle of olive oil.

Notes

For an extra kick, add a splash of hot sauce or finely diced jalapeño. Serve chilled to fully enjoy the refreshing flavors.
