Vinegar Coleslaw

A tangy and refreshing vinegar coleslaw that’s perfect as a light side dish or topping for sandwiches and BBQ.

  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped red onion
  • 1/2 cup apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine the shredded cabbage, carrots, and chopped red onion.
  2. In a small bowl, whisk together apple cider vinegar, sugar, celery seed, salt, black pepper, and olive oil until the sugar dissolves.
  3. Pour the dressing over the cabbage mixture and toss to combine thoroughly.
  4. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  5. Give the coleslaw a final toss before serving. Adjust seasoning if needed.

Notes

For a creamier coleslaw, add 2 tablespoons mayonnaise or Greek yogurt to the dressing before mixing with the vegetables.
