Valentine Strawberry Cookies

Delight in these soft and sweet Valentine Strawberry Cookies, bursting with fresh strawberry flavor and perfect for sharing on special occasions.

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 1/2 cup freeze-dried strawberries, crushed
  • Pink sanding sugar, for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crushed freeze-dried strawberries gently.
  7. Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
  8. Using your thumb or the back of a spoon, make an indentation in the center of each cookie ball.
  9. Spoon about 1/2 teaspoon of strawberry jam into each indentation.
  10. Sprinkle pink sanding sugar over the cookies if desired.
  11. Bake for 10-12 minutes or until the edges are lightly golden.
  12. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra strawberry punch, drizzle melted white chocolate over cooled cookies before serving.
