Tuna Pasta Salad

A refreshing and protein-packed Tuna Pasta Salad perfect for quick lunches or light dinners, combining tender pasta, flaky tuna, and crisp vegetables with a zesty dressing.

Ingredients

  • 2 cups elbow macaroni
  • 1 can (5 oz) tuna in water, drained
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta, drained tuna, celery, red onion, cherry tomatoes, and black olives.
  3. In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Sprinkle with fresh parsley and adjust seasoning if needed.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

For added crunch, top the salad with toasted pine nuts or sliced almonds just before serving.
