Triple Almond Cookies

Delight in these Triple Almond Cookies featuring almond flour, almond extract, and toasted sliced almonds for a rich, nutty flavor and perfectly chewy texture.

  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/3 cup sliced almonds, toasted

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together almond flour, all-purpose flour, baking powder, and salt.
  3. In a separate large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the egg, almond extract, and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just incorporated.
  6. Fold in half of the toasted sliced almonds into the dough.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Sprinkle the remaining toasted sliced almonds on top of each cookie, gently pressing them in.
  9. Bake for 12-15 minutes, or until the edges turn golden brown.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra crunch, drizzle melted dark chocolate over cooled cookies before serving.
