A crisp and refreshing coleslaw with a tangy vinegar dressing, perfect as a light side or topping for sandwiches. This vibrant dish combines shredded cabbage with a zesty, slightly sweet vinaigrette for an easy no-cook recipe.

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup finely chopped red onion
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon celery seed
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, combine shredded green cabbage, red cabbage, carrots, and chopped red onion.
  2. In a separate small bowl, whisk together apple cider vinegar, olive oil, honey, Dijon mustard, celery seed, salt, and pepper until well blended.
  3. Pour the dressing over the cabbage mixture and toss thoroughly to coat all the vegetables evenly.
  4. Let the coleslaw sit in the refrigerator for at least 30 minutes to allow flavors to meld.
  5. Give it a quick toss before serving, adjusting seasoning if needed.

Notes

For extra crunch, sprinkle toasted sunflower seeds or chopped nuts on top before serving, or add a pinch of smoked paprika for a subtle smoky twist.
