Strawberry Tiramisu

This Strawberry Tiramisu is a light and refreshing twist on the classic Italian dessert, layered with fresh strawberries and creamy mascarpone for a perfect summer treat.

Ingredients

  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 1/2 cup strawberry syrup or juice
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. In a bowl, combine sliced strawberries, granulated sugar, and lemon juice. Let macerate for 15 minutes until juicy.
  2. In a separate bowl, whip heavy cream until soft peaks form.
  3. In another bowl, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  4. Gently fold the whipped cream into the mascarpone mixture until well combined.
  5. Quickly dip ladyfinger cookies into strawberry syrup or juice and line the bottom of a serving dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Layer half of the macerated strawberries over the mascarpone layer.
  8. Repeat with another layer of dipped ladyfingers, mascarpone mixture, and strawberries.
  9. Cover and refrigerate for at least 4 hours or overnight to set.
  10. Garnish with fresh mint leaves before serving, if desired.

Notes

For an extra burst of flavor, add a drizzle of balsamic glaze over the strawberries before assembling the tiramisu.
