Strawberry Sugar Cookies

Delightfully soft and chewy strawberry sugar cookies bursting with natural berry flavor, perfect for any occasion.

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ teaspoon strawberry extract
  • ½ cup freeze-dried strawberries, crushed
  • 2 tablespoons milk
  • Red and pink sanding sugar, for decoration (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add the egg, vanilla extract, and strawberry extract to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crushed freeze-dried strawberries gently.
  7. Stir in the milk to achieve a soft dough consistency.
  8. Roll dough into 1-inch balls and place onto prepared baking sheets about 2 inches apart.
  9. Flatten each ball slightly with the bottom of a glass or your palm and sprinkle with sanding sugar if desired.
  10. Bake for 10-12 minutes or until the edges are lightly golden.
  11. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra burst of berry flavor, drizzle melted white chocolate over cooled cookies before serving.
