  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 cup low-fat buttermilk
  • 1/4 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, mix together the rolled oats, whole wheat flour, all-purpose flour, baking powder, baking soda, salt, cinnamon, and brown sugar.
  3. In a separate bowl, whisk the egg, buttermilk, applesauce, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  5. Fold in the chopped strawberries carefully.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, sprinkle the tops with a little raw sugar before baking. Serve warm with a smear of butter or yogurt.
