Strawberry Layer Cake

This Strawberry Layer Cake is a moist, fluffy dessert featuring fresh strawberries and creamy frosting, perfect for celebrations or a special treat.

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 2 cups fresh strawberries, sliced
  • 1 ½ cups heavy cream
  • ¼ cup powdered sugar
  • Fresh strawberries for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Alternately add flour mixture and milk to the butter mixture, beginning and ending with flour; mix until just combined.
  6. Divide batter evenly among prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool cakes in pans for 10 minutes, then remove from pans and cool completely on wire racks.
  8. Whip heavy cream with powdered sugar until stiff peaks form.
  9. Place one cake layer on a serving plate. Spread whipped cream and top with sliced strawberries. Repeat layering with remaining cake layers, cream, and strawberries.
  10. Frost the outside of the cake with remaining whipped cream and garnish with fresh strawberries.
  11. Refrigerate for at least 1 hour before serving.

Notes

For an extra flavor boost, macerate the sliced strawberries with a tablespoon of sugar and a splash of lemon juice for 30 minutes before layering.
