  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, diced
  • Optional: pink sanding sugar for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the thawed Cool Whip, eggs, and vanilla extract; beat well until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
  6. Gently fold in the diced fresh strawberries, being careful not to overmix.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing about 2 inches apart.
  8. If desired, sprinkle the cookies with pink sanding sugar for a decorative touch.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra burst of strawberry flavor, add a teaspoon of strawberry extract or use freeze-dried strawberry powder in the dough. Serve chilled for a refreshing twist.
