  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh strawberries, finely chopped
  • 1 cup powdered sugar (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, cream cheese, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped fresh strawberries gently.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12–15 minutes or until edges are lightly golden.
  9. While cookies cool, prepare the cheesecake filling by mixing cream cheese with powdered sugar until smooth.
  10. Once cookies are cool, sandwich two cookies together with a spoonful of cheesecake filling.
  11. Serve immediately or refrigerate for a firmer filling.

Notes

For extra flavor, chill the cookies after assembling to let the cheesecake filling set perfectly, and garnish with a small slice of fresh strawberry on top.
