Strawberry Banana Muffins

Deliciously moist and naturally sweet, these Strawberry Banana Muffins are perfect for a healthy breakfast or snack, combining ripe bananas and fresh strawberries in every bite.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 ripe bananas, mashed
  • 1 cup fresh strawberries, chopped
  • ¾ cup sugar
  • 1 large egg, beaten
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, combine mashed bananas, chopped strawberries, sugar, beaten egg, vegetable oil, and vanilla extract; mix well.
  4. Gradually add the dry ingredients to the wet ingredients, gently folding until just combined. Do not overmix.
  5. Divide the batter evenly into the prepared muffin tin, filling each cup about ¾ full.
  6. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For added texture, sprinkle chopped walnuts or oats on top before baking. These muffins are delicious served warm with a pat of butter or cream cheese.
