  • 1/4 cup heavy cream (for frosting)
  • Black and yellow food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, vegetable oil, eggs, and vanilla extract until well blended.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  5. Carefully stir in boiling water until the batter is well combined; batter will be thin.
  6. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cupcakes to cool completely on a wire rack before frosting.
  9. For the frosting, beat butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla extract until light and fluffy.
  10. Divide frosting into two portions; tint one yellow and one black with food coloring.
  11. Frost cupcakes using star tips or spread with a knife, then decorate with Star Wars themed edible toppers.
