Spring Frittata with Goat Cheese

A bright and airy spring frittata featuring creamy goat cheese and fresh seasonal vegetables, perfect for a wholesome brunch or light dinner.

  • 8 large eggs
  • 1/4 cup milk
  • 4 oz goat cheese, crumbled
  • 1 cup asparagus, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup fresh spinach, chopped
  • 1 small shallot, finely sliced
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • 1 tbsp fresh chives, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  3. Heat olive oil in an ovenproof skillet over medium heat.
  4. Add shallots and sauté until translucent, about 2 minutes.
  5. Add asparagus and cherry tomatoes; cook for 3-4 minutes until slightly tender.
  6. Stir in spinach and cook until wilted.
  7. Pour the egg mixture into the skillet over the vegetables, stirring gently to combine.
  8. Sprinkle crumbled goat cheese evenly over the top.
  9. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the eggs are set and slightly golden.
  10. Remove from oven, garnish with fresh chives, slice, and serve warm.

Notes

For an extra burst of flavor, drizzle with a little balsamic glaze before serving or serve alongside a fresh green salad.
