Spicy Cucumber Salad Recipe

This Spicy Cucumber Salad is a refreshing and zesty dish featuring crisp cucumbers tossed in a tangy, spicy dressing, perfect for a light snack or side dish.

  • 2 large cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/2 teaspoon grated ginger
  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds
  • Salt to taste

Instructions

  1. Place the thinly sliced cucumbers in a colander and sprinkle with a little salt. Let them sit for 10 minutes to draw out excess water, then gently pat dry.
  2. In a bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, minced garlic, red pepper flakes, and grated ginger until sugar dissolves.
  3. Combine the cucumbers and green onions in a mixing bowl.
  4. Pour the spicy dressing over the cucumbers and toss well to coat evenly.
  5. Sprinkle toasted sesame seeds on top for garnish.
  6. Chill the salad in the refrigerator for at least 15 minutes before serving to allow flavors to meld.

Notes

For an extra crunch, add thinly sliced radishes or a handful of chopped peanuts before serving.
