Southern Potato Salad

Classic Southern Potato Salad features tender potatoes mixed with a creamy, tangy dressing and crunchy celery, perfect for picnics and family gatherings.

  • 3 lbs russet potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 3 celery stalks, finely chopped
  • 1/2 cup chopped sweet onion
  • 4 hard-boiled eggs, chopped
  • 1/4 cup sweet pickle relish
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons apple cider vinegar

Instructions

  1. Place cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 10-12 minutes.
  2. Drain potatoes and rinse with cold water to cool. Set aside.
  3. In a large bowl, combine mayonnaise, yellow mustard, apple cider vinegar, salt, pepper, and smoked paprika. Mix well.
  4. Add cooled potatoes, chopped celery, sweet onion, hard-boiled eggs, and pickle relish to the dressing. Gently fold together until evenly coated.
  5. Cover and refrigerate for at least 2 hours before serving to allow flavors to meld.

Notes

For extra crunch, add chopped crispy bacon or garnish with fresh chopped parsley before serving.
