1 cup sourdough starter (active and bubbly)
1 cup whole milk
3 large eggs
1 cup all-purpose flour
1/2 teaspoon salt
2 tablespoons unsalted butter, melted
Instructions
Preheat the oven to 450°F (230°C). Lightly grease a 6-cup popover pan or muffin tin with butter.
In a mixing bowl, whisk together the sourdough starter, milk, and eggs until smooth.
Add the flour and salt to the wet ingredients and whisk until just combined; the batter will be slightly lumpy.
Stir in the melted butter gently.
Pour the batter evenly into the prepared pan, filling each cup about three-quarters full.
Bake for 15 minutes at 450°F (230°C), then reduce the temperature to 350°F (175°C) and bake for an additional 20 minutes until the popovers are puffed and golden brown.
Remove from oven and serve immediately for best puffiness.
