Sourdough Popovers

Light and airy sourdough popovers with a crisp golden crust, perfect for breakfast or a savory snack.

  • 1 cup sourdough starter (active and bubbly)
  • 1 cup whole milk
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 450°F (230°C). Lightly grease a 6-cup popover pan or muffin tin with butter.
  2. In a mixing bowl, whisk together the sourdough starter, milk, and eggs until smooth.
  3. Add the flour and salt to the wet ingredients and whisk until just combined; the batter will be slightly lumpy.
  4. Stir in the melted butter gently.
  5. Pour the batter evenly into the prepared pan, filling each cup about three-quarters full.
  6. Bake for 15 minutes at 450°F (230°C), then reduce the temperature to 350°F (175°C) and bake for an additional 20 minutes until the popovers are puffed and golden brown.
  7. Remove from oven and serve immediately for best puffiness.

Notes

For extra flavor, try adding a teaspoon of fresh herbs or shredded cheese into the batter before baking.
