Deliciously airy and lightly sweet, these sourdough discard sugar donuts turn starter leftovers into a delightful treat perfect for breakfast or snack time.

  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Vegetable oil, for frying
  • 1/2 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (optional, for coating)

Instructions

  1. In a large bowl, whisk together the sourdough discard, egg, melted butter, and milk until well combined.
  2. In a separate bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing just until a sticky dough forms.
  4. Turn the dough onto a floured surface and gently knead a few times to incorporate.
  5. Roll out the dough to about 1/2-inch thickness and cut donuts using a donut cutter or two round cutters.
  6. Heat vegetable oil in a deep pan to 350°F (175°C). Fry the donuts in batches until golden brown, about 1-2 minutes per side.
  7. Remove donuts from oil and drain on paper towels.
  8. Mix granulated sugar with ground cinnamon in a shallow bowl. While donuts are still warm, toss them in the sugar mixture to coat evenly.
  9. Serve warm and enjoy!
