These Sourdough Discard Pretzel Bites are chewy, golden-brown snacks made from leftover sourdough starter, perfect for a savory treat or appetizer.

  • 1 cup sourdough discard
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup warm water
  • 2 tablespoons unsalted butter, melted
  • Coarse sea salt, for sprinkling
  • For boiling: 4 cups water, 2 tablespoons baking soda

Instructions

  1. In a large bowl, combine sourdough discard, flour, sugar, salt, baking soda, and warm water until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  3. Divide the dough into small bite-sized pieces and roll each into a ball.
  4. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. Bring 4 cups of water and 2 tablespoons baking soda to a boil in a large pot.
  6. Boil pretzel bites in batches for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
  7. Brush the bites with melted butter and sprinkle with coarse sea salt.
  8. Bake for 12-15 minutes until golden brown and crisp.
  9. Remove from oven and let cool slightly before serving.

Notes

For extra flavor, serve with mustard or cheese sauce. You can also add cinnamon sugar instead of sea salt for a sweet variation.
