Sourdough Discard Kolaches

Delight in soft, fluffy kolaches made with tangy sourdough discard, filled with your choice of sweet or savory fillings for a perfect breakfast or snack.

  • 1 cup sourdough discard
  • 1/2 cup warm milk
  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 3 cups all-purpose flour
  • 1/2 tsp salt
  • Assorted fillings (fruit preserves, cream cheese, sausage, or ham and cheese)

Instructions

  1. In a large bowl, combine warm milk, yeast, and sugar; let sit 5 minutes until foamy.
  2. Mix in sourdough discard, melted butter, and egg until combined.
  3. Gradually add flour and salt, kneading until a smooth dough forms.
  4. Cover and let dough rise in a warm place for 1-1.5 hours until doubled in size.
  5. Preheat oven to 375°F (190°C). Punch down dough and divide into 12 equal pieces.
  6. Roll each piece into a ball and flatten slightly. Place a spoonful of your chosen filling in the center of each.
  7. Pinch the edges around the filling to seal, shaping into rounds, and place on a baking sheet lined with parchment.
  8. Let kolaches rise for another 20-30 minutes.
  9. Bake for 15-18 minutes until golden brown.
  10. Cool slightly before serving and enjoy warm.

Notes

For extra flavor, brush the tops with melted butter immediately after baking and sprinkle with powdered sugar if making sweet kolaches.
