Sourdough Discard Apple Cider Donuts Bread

This moist and flavorful bread combines tangy sourdough discard with sweet apple cider and warm spices, creating a deliciously unique twist on classic apple cider donuts in loaf form.

  • 1 cup sourdough discard (unfed)
  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a large bowl, combine sourdough discard and apple cider. Stir well to mix.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In the sourdough and cider mixture, add granulated sugar, brown sugar, melted butter, egg, and vanilla extract. Mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For an extra touch, brush the top of the warm bread with melted butter and sprinkle with cinnamon sugar before serving.
