Sourdough Chocolate Chip Muffins

  • 1 cup sourdough starter (active and bubbly)
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the sourdough starter, melted butter, milk, eggs, and vanilla extract until smooth.
  3. In a separate bowl, combine the flour, sugar, brown sugar, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  5. Fold in the chocolate chips evenly throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a pinch of coarse sugar on top of each muffin before baking for a crunchy, sweet crust.
