Sourdough Cheese Crackers

Crispy and savory sourdough cheese crackers made with naturally fermented sourdough discard and sharp cheddar for a perfect snack or appetizer.

  • 1 cup sourdough starter discard (unfed)
  • 1 cup sharp cheddar cheese, shredded
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)
  • 3 tablespoons unsalted butter, cold and cubed
  • 2-3 tablespoons cold water

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine the flour, salt, and garlic powder.
  3. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar and sourdough starter discard until combined.
  5. Add cold water 1 tablespoon at a time, mixing until a dough forms.
  6. Roll the dough between two sheets of parchment to about 1/8-inch thickness.
  7. Cut into desired shapes using a knife or cookie cutters and place them on the prepared baking sheet.
  8. Optionally, prick each cracker with a fork to prevent puffing.
  9. Bake for 20-25 minutes or until golden and crisp.
  10. Cool completely before serving.

Notes

For extra flavor, sprinkle with a pinch of flaky sea salt or herbs like rosemary before baking.
