Sourdough Blueberry Breakfast Bars

  • 1 cup sourdough starter discard
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • Optional: 1/4 cup chopped nuts (walnuts or almonds)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix together sourdough starter discard, honey, melted coconut oil, and vanilla extract until smooth.
  3. In a separate bowl, whisk rolled oats, almond flour, baking powder, cinnamon, and salt.
  4. Gradually add dry ingredients to the wet mixture and stir until combined.
  5. Gently fold in the fresh blueberries and optional chopped nuts.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes or until the top is golden and a toothpick inserted comes out clean.
  8. Allow bars to cool completely in the pan before slicing into squares.

Notes

For extra flavor, drizzle bars with a light glaze made from powdered sugar and lemon juice, or serve with a dollop of Greek yogurt.
