  • 4 beef hot dogs
  • 4 slices of bacon
  • 1 cup cooked pinto beans
  • 1 medium tomato, diced
  • 1/4 cup white onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mayonnaise
  • 1/4 cup mustard
  • 1/4 cup salsa verde
  • 1 jalapeño, thinly sliced
  • 1/2 cup shredded cheddar cheese
  • Lime wedges (optional)

Instructions

  1. Wrap each hot dog with a slice of bacon, securing with toothpicks if needed.
  2. Grill the bacon-wrapped hot dogs over medium heat until bacon is crisp and hot dogs are cooked through, about 7-10 minutes.
  3. Lightly toast the hot dog buns on the grill or in a skillet.
  4. Spread mayonnaise and mustard inside each bun.
  5. Place the grilled hot dog in the bun, then top with a spoonful of cooked pinto beans.
  6. Add diced tomatoes, chopped onions, cilantro, jalapeño slices, shredded cheddar cheese, and salsa verde on top of the beans.
