Shortcake Layer Cake

This Shortcake Layer Cake features tender layers of buttery shortcake cake, fresh berries, and fluffy whipped cream for a classic and refreshing dessert.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients, mixing just until combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. Meanwhile, whip the heavy cream with powdered sugar and lemon juice until stiff peaks form.
  10. Wash and slice the berries as needed.
  11. Place one cake layer on a serving plate, spread with a layer of whipped cream, and top with a portion of berries.
  12. Place the second cake layer on top and repeat with whipped cream and remaining berries.
  13. Chill the assembled cake for at least 30 minutes before serving.

Notes

For extra flavor, macerate the berries with a tablespoon of sugar and a splash of lemon juice for 15 minutes before assembling the cake.
