Salmon Cobb Salad with Lemon Dill

A fresh and flavorful Cobb salad featuring perfectly cooked salmon, crisp vegetables, and a zesty lemon dill dressing for a light yet satisfying meal.

  • 2 salmon fillets (6 oz each)
  • 1 head romaine lettuce, chopped
  • 1 avocado, diced
  • 2 hard-boiled eggs, sliced
  • 1 cup cherry tomatoes, halved
  • 4 slices cooked bacon, crumbled
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup crumbled blue cheese
  • Juice of 1 lemon
  • 2 tablespoons fresh dill, chopped
  • 3 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat grill or skillet over medium heat. Season salmon fillets with salt and pepper.
  2. Cook salmon for 4-5 minutes per side until cooked through and flaky. Remove and let cool slightly.
  3. In a small bowl, whisk together lemon juice, chopped dill, olive oil, salt, and pepper to make the dressing.
  4. In a large bowl, combine romaine lettuce, avocado, cherry tomatoes, cucumber, red onion, bacon, and blue cheese.
  5. Flake the salmon into large pieces and gently fold into the salad.
  6. Drizzle the lemon dill dressing over the salad and toss gently to combine.
  7. Top with sliced hard-boiled eggs and serve immediately.

Notes

For an extra burst of flavor, sprinkle some capers or add a dollop of Greek yogurt to the dressing.
