  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 1 1/2 cups half-and-half
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 unbaked 9-inch pie crust

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place chopped rhubarb in the unbaked pie crust.
  3. In a bowl, whisk together sugar, eggs, flour, and salt until smooth.
  4. Gradually whisk in the half-and-half and vanilla extract.
  5. Pour the custard mixture over the rhubarb in the crust.
