  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • 1 teaspoon vanilla extract
  • Red and blue food coloring
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • Fresh blueberries and strawberries for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with 12 liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with flour; mix until just combined.
  6. Divide the batter evenly into three bowls. Add red food coloring to one bowl and blue food coloring to another, leaving the third white.
  7. Layer the batter into cupcake liners starting with red, then white, then blue to create a tri-color effect.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cupcakes cool completely.
  9. For the frosting, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  10. Frost each cupcake with whipped cream and garnish with fresh blueberries and sliced strawberries.

Notes

For an extra festive touch, sprinkle edible stars or silver pearls on top before serving.
