Queso Fundido

Queso Fundido is a warm, melted cheese dip from Mexican cuisine, perfect for sharing as an appetizer or snack with savory toppings like chorizo and peppers.

Ingredients

  • 2 cups shredded Oaxaca or mozzarella cheese
  • 1/2 cup cooked chorizo, crumbled
  • 1/4 cup diced poblano peppers
  • 1/4 cup diced onions
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • 1 small jalapeño, finely chopped (optional)
  • Fresh cilantro, chopped (for garnish)
  • Warm corn or flour tortillas, for serving

Instructions

  1. Heat the vegetable oil in a skillet over medium heat. Add the diced onions, poblano peppers, and garlic; sauté until soft, about 3-4 minutes.
  2. Add the crumbled chorizo to the skillet and cook until browned, about 5 minutes.
  3. Reduce heat to low. Spread the shredded cheese evenly over the chorizo and vegetables in the skillet.
  4. Cover the skillet with a lid and cook until the cheese is completely melted and bubbly, about 5-7 minutes.
  5. If desired, sprinkle chopped jalapeño on top for added heat.
  6. Remove from heat, garnish with fresh cilantro, and serve immediately with warm tortillas for dipping.

Notes

For a vegetarian version, omit the chorizo and add sautéed mushrooms or roasted vegetables instead.
