  • For the frosting: 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, whisk together sugar and oil until combined. Add egg, buttermilk, vanilla extract, red food coloring, and vinegar; mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until smooth and fully incorporated.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow cupcakes to cool completely on a wire rack before frosting.
  8. To make the frosting, beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  9. Frost the cooled cupcakes using a piping bag or spatula.
