  • ½ cup crushed pineapple, drained
  • ¼ cup brown sugar
  • Maraschino cherries (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Take a small scoop of dough and flatten it slightly. Sprinkle brown sugar on top, then place a small amount of crushed pineapple and a cherry if using on top, pressing gently to adhere.
  7. Place each cookie on the prepared baking sheet about 2 inches apart.
  8. Bake for 12-15 minutes or until edges are lightly golden.
  9. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
