Pineapple chicken and rice

This vibrant pineapple chicken and rice dish combines tender chicken with sweet pineapple and savory seasonings for a quick and flavorful meal perfect for any night of the week.

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup jasmine rice
  • 1 1/2 cups chicken broth
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1/2 cup diced bell peppers (red or green)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tbsp honey
  • 1 tsp grated fresh ginger
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add the chopped onion and garlic; sauté until fragrant and translucent, about 2-3 minutes.
  2. Add the chicken pieces to the skillet, seasoning with salt and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
  3. Stir in the grated ginger, bell peppers, and pineapple chunks. Cook for another 2 minutes.
  4. Add the rice to the skillet, stirring to combine with the chicken and vegetables.
  5. Pour in chicken broth, soy sauce, and honey. Stir well, bring to a boil, then reduce heat to low.
  6. Cover and simmer for 15-18 minutes, or until the rice is cooked and liquid is absorbed.
  7. Remove from heat and let sit covered for 5 minutes. Fluff the rice with a fork.
  8. Garnish with sliced green onions and serve warm.

Notes

For extra flavor, try adding a splash of fresh lime juice or a sprinkle of crushed red pepper flakes before serving.
