Pecan Pie Cookies

Delight in these rich and buttery Pecan Pie Cookies, combining the classic flavors of pecan pie in a bite-sized cookie perfect for any dessert occasion.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups chopped pecans
  • 1/2 cup corn syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped pecans evenly.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  8. In a small bowl, mix the corn syrup with a few chopped pecans and lightly press a small amount onto the top of each cookie.
  9. Bake for 12-15 minutes, or until the edges are golden and the centers are set.
  10. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

For a gooier center, add a small dollop of pecan pie filling before baking or drizzle melted caramel on top after baking.
