  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 to 4 tablespoons buttermilk
  • Food coloring in pastel shades
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 2 tablespoons heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a small bowl, stir together flour, baking soda, and baking powder; set aside.
  3. In a large bowl, cream together the softened butter and sugar until smooth. Beat in egg, vanilla extract, and almond extract.
  4. Gradually blend in the dry ingredients. Add buttermilk 1 tablespoon at a time until dough is soft but not sticky.
  5. Divide dough into separate bowls and tint each with a different pastel food coloring.
  6. Roll tablespoon-sized balls of dough onto the prepared baking sheets, spacing about 2 inches apart. Flatten slightly.
  7. Bake for 8 to 10 minutes or until edges are just golden. Allow cookies to cool completely on wire racks.
  8. For frosting, beat butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla extract until fluffy and spreadable.
  9. Spread frosting on the bottom side of one cookie and sandwich with another cookie of the same color or different pastel shade.
  10. Repeat until all cookies are assembled. Chill sandwiches for 30 minutes before serving.

Notes

For extra flair, roll the edges of the frosting in pastel sprinkles or colored sugar before chilling.
