Panzanella Salad (Tuscan Bread and Tomato Salad)

Panzanella Salad is a refreshing Italian bread salad that combines ripe tomatoes, crusty bread, and fresh herbs for a vibrant, flavorful summer dish.

Ingredients

  • 4 cups stale crusty bread, cut into 1-inch cubes
  • 4 large ripe tomatoes, chopped
  • 1 cucumber, peeled and sliced
  • 1 red bell pepper, chopped
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 3 tablespoons red wine vinegar
  • 1/4 cup extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place bread cubes in a large bowl.
  2. In a separate bowl, whisk together red wine vinegar, olive oil, salt, and pepper to make the dressing.
  3. Add the chopped tomatoes, cucumber, bell pepper, and red onion to the bread cubes.
  4. Pour the dressing over the mixture and toss gently to combine.
  5. Let the salad sit for at least 30 minutes at room temperature to allow the bread to absorb the flavors.
  6. Just before serving, add the fresh basil leaves and toss lightly.

Notes

For extra flavor, try adding some capers or substitute red wine vinegar with balsamic vinegar for a sweeter touch.
