One Pan Lemon Orzo Chicken

This One Pan Lemon Orzo Chicken is a zesty, comforting dish where tender chicken and creamy orzo come together in a bright lemon sauce for an easy weeknight meal.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs
  • Salt and freshly ground black pepper, to taste
  • 1 cup orzo pasta
  • 3 cloves garlic, minced
  • 1 1/2 cups low-sodium chicken broth
  • 1 cup water
  • 1/3 cup fresh lemon juice (about 2 lemons)
  • 1 teaspoon lemon zest
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Optional: red pepper flakes for a bit of heat

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then add to the skillet. Cook 5-6 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  2. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  3. Add orzo to the skillet and toast for 1-2 minutes, stirring constantly.
  4. Pour in chicken broth, water, lemon juice, and lemon zest. Stir to combine and bring to a simmer.
  5. Return chicken to the skillet, nestling it into the orzo mixture.
  6. Cover the skillet, reduce heat to low, and simmer for 12-15 minutes until orzo is tender and has absorbed most of the liquid.
  7. Remove from heat, stir in Parmesan cheese and fresh parsley. Adjust seasoning with salt, pepper, and red pepper flakes if using.
  8. Serve warm, garnished with extra lemon zest or parsley if desired.

Notes

For extra brightness, garnish with fresh lemon slices or serve with a side salad. You can substitute chicken breast if preferred, just watch the cooking time to avoid drying out.
