No-Bake Strawberry Cheesecake

This No-Bake Strawberry Cheesecake is a creamy and refreshing dessert made with a buttery graham cracker crust and topped with fresh strawberries, perfect for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted unsalted butter
  • 2 tablespoons granulated sugar
  • 16 oz (450g) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons strawberry jam (optional)

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  2. In a large bowl, beat the softened cream cheese until smooth and creamy.
  3. Add powdered sugar and vanilla extract to the cream cheese and continue to beat until well combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and smooth.
  6. Pour the cheesecake filling over the crust and spread evenly.
  7. In a small bowl, toss the sliced strawberries with lemon juice and, if desired, warm strawberry jam for a glaze.
  8. Arrange the strawberries on top of the cheesecake filling.
  9. Refrigerate the cheesecake for at least 4 hours or overnight until set.
  10. Remove from the springform pan, slice, and serve chilled.

Notes

For an added touch, garnish with fresh mint leaves or a drizzle of melted white chocolate before serving.
