No-Bake Mango Cheesecake

This No-Bake Mango Cheesecake is a refreshing, creamy dessert featuring ripe mangoes and a smooth cheesecake filling on a crunchy biscuit base, perfect for warm days.

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 300g cream cheese, softened
  • 100g powdered sugar
  • 200ml heavy cream
  • 2 ripe mangoes, peeled and pureed
  • 2 tsp gelatin powder
  • 3 tbsp hot water
  • 1 tsp vanilla extract

Instructions

  1. Mix crushed digestive biscuits with melted butter and press into the base of a 9-inch springform pan. Chill in the refrigerator for 15 minutes.
  2. In a small bowl, dissolve gelatin powder in hot water and set aside to bloom.
  3. In a large bowl, beat cream cheese and powdered sugar until smooth and creamy.
  4. Whip heavy cream until stiff peaks form, then fold gently into the cream cheese mixture.
  5. Stir in mango puree and vanilla extract into the cream cheese mixture.
  6. Heat the bloomed gelatin gently until melted and mix a small amount into the cheesecake batter, then fold it all together thoroughly.
  7. Pour the mixture over the chilled crust and smooth the top. Refrigerate for at least 4 hours or until set.
  8. Remove from pan, garnish with mango slices or fresh mint leaves if desired, and serve chilled.

Notes

For an extra tropical flavor, add a tablespoon of lime juice to the mango puree or serve with a drizzle of passion fruit syrup.
