  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • 2 teaspoons dried culinary lavender, finely crushed
  • 1 tablespoon lemon zest
  • Optional: edible lavender flowers for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and crushed lavender.
  3. In a large bowl, cream the butter and honey until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract and lemon zest.
  5. Alternately add the flour mixture and buttermilk to the wet ingredients, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cake to cool completely in the pan on a wire rack before removing.
  9. Optionally, garnish with edible lavender flowers before serving.
