Mint Lemon Cupcakes

  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp fresh mint leaves, finely chopped
  • For the frosting: 1 cup powdered sugar
  • 4 tbsp unsalted butter, softened
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh mint leaves, finely chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Alternately add the dry ingredients and sour cream to the butter mixture, beginning and ending with dry ingredients. Mix gently until combined.
  6. Fold in lemon juice, lemon zest, and chopped mint leaves.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow cupcakes to cool completely on a wire rack before frosting.
  10. For the frosting, beat butter until smooth, then gradually add powdered sugar, lemon juice, and chopped mint, mixing until creamy.
  11. Frost the cooled cupcakes as desired and garnish with extra mint leaves if preferred.

Notes

For an extra burst of flavor, chill the cupcakes for an hour before serving and garnish with thin lemon slices.
