A vibrant and refreshing Mexican Chopped Salad packed with fresh vegetables, black beans, corn, and a tangy lime dressing, perfect for a healthy meal or side dish.

Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen (thawed)
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup crumbled cotija cheese (optional)
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped romaine, cherry tomatoes, black beans, corn, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, ground cumin, chili powder, salt, and pepper.
  3. Pour the dressing over the salad and toss until well coated.
  4. Gently fold in the diced avocado and cotija cheese, if using.
  5. Adjust seasoning as needed and serve immediately for best freshness.

Notes

For added protein, top the salad with grilled chicken or shrimp. Serve chilled as a side dish or as a light main course.
