Instructions

  1. Boil baby potatoes in salted water until tender, about 15 minutes, then drain and let cool.
  2. In a large bowl, mix mayonnaise, Dijon mustard, and chopped parsley to create the dressing for the potato salad.
  3. Toss the cooled potatoes with the dressing and fold in cherry tomatoes gently.
  4. Grill fresh corn kernels lightly in a hot pan with olive oil, smoked paprika, salt, and pepper for 5 minutes.
  5. Combine coleslaw mix with apple cider vinegar, honey, celery seed, and lemon juice to prepare a refreshing coleslaw.
