Memorial Day Flag Cake

Celebrate Memorial Day with this festive Flag Cake featuring layers of moist vanilla cake decorated with fresh strawberries, blueberries, and whipped cream resembling the American flag.

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup whole milk
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • 1 ½ cups fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour batter into prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cake to cool completely in the pan on a wire rack.
  8. Meanwhile, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  9. Once the cake is cooled, spread whipped cream evenly over the top.
  10. Arrange the sliced strawberries in rows to represent the red stripes of the flag.
  11. Place the blueberries in the top left corner to form the blue field with stars.
  12. Chill the decorated cake for at least 1 hour before serving to set the cream.

Notes

For an extra patriotic touch, consider adding small star-shaped white chocolate pieces on the blueberry section to mimic stars.
