  • 1 cup fresh blueberries
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, combine the sourdough starter, warm milk, maple syrup, egg, and melted butter. Whisk until smooth.
  2. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined; do not overmix.
  4. Fold in the fresh blueberries carefully to avoid crushing them.
  5. Cover the batter and let it rest at room temperature for about 30 minutes to slightly ferment and thicken.
  6. Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  7. Using a small spoon or cookie scoop, carefully drop small portions of batter into the hot oil, frying in batches to avoid overcrowding.
  8. Fry for about 2-3 minutes, turning occasionally until golden brown and cooked through.
  9. Remove the donut holes with a slotted spoon and drain on paper towels.
