Mango Salsa Grilled Salmon

This Mango Salsa Grilled Salmon features tender, smoky salmon topped with a vibrant, fresh mango salsa, perfect for a healthy and flavorful meal.

  • 4 salmon fillets (6 oz each)
  • 1 ripe mango, peeled and diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Cooking spray or extra olive oil for grilling

Instructions

  1. Preheat the grill to medium-high heat and lightly oil the grates.
  2. In a bowl, combine the diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Mix well and set aside.
  3. Pat salmon fillets dry and brush both sides with olive oil. Season with salt and black pepper.
  4. Place salmon on the grill, skin side down, and cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
  5. Remove salmon from the grill and transfer to serving plates.
  6. Top each salmon fillet generously with the prepared mango salsa.
  7. Serve immediately, garnished with extra cilantro if desired.

Notes

For extra zing, add a sprinkle of chili powder to the salmon before grilling or serve with a side of cilantro-lime rice for a complete meal.
