Loaded Cheddar Potato Salad

This Loaded Cheddar Potato Salad combines tender potatoes, sharp cheddar cheese, crispy bacon, and fresh green onions in a creamy dressing, creating a perfect side dish for any gathering.

Ingredients

  • 3 pounds Yukon gold potatoes, peeled and diced
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 4 green onions, thinly sliced
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place the diced potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
  2. Reduce heat and simmer potatoes until tender, about 10-12 minutes. Drain and let cool slightly.
  3. In a large bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
  4. Add the warm potatoes to the dressing and gently fold to coat evenly.
  5. Stir in shredded cheddar cheese, crumbled bacon, and sliced green onions.
  6. Refrigerate the potato salad for at least 1 hour before serving to allow flavors to meld.
  7. Give it a final stir and adjust seasoning if needed before serving.

Notes

For extra creaminess, add a dollop of sour cream or swap half the mayonnaise with Greek yogurt. Serve chilled or at room temperature for best flavor.
