  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons limoncello liqueur
  • 1 tablespoon fresh lemon zest
  • 1 teaspoon vanilla extract
  • ½ cup powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, limoncello, lemon zest, and vanilla extract to the butter mixture and beat until combined.
  5. Gradually add the flour mixture, mixing until just incorporated.
  6. Shape dough into 1-inch balls and place them 2 inches apart on the baking sheet.
  7. Bake for 12-14 minutes, or until edges are lightly golden.
  8. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.
  9. Once cooled, dust cookies with powdered sugar before serving.

Notes

For an extra burst of lemon flavor, drizzle cooled cookies with a simple lemon glaze made from powdered sugar and limoncello.
